Yeah yeah, I’ve been Mia for awhile now, I am aware. I sincerely apologize for my absence but work literally took over my life the week of Thanksgiving and then all I wanted to do was rest during the holiday weekend. I just want my readers to know that my lack of blogging is not due to my disinterest but more so life getting really hectic and my inability to multitask as much as I would like.
I mean let’s be serious, I was so tired Thanksigiving I didn’t bake once. Gasp. That’s when you know I need a break. And ok I took a hiatus awhile after that too but I’m back and ready to blog like my normal self.

And speaking of peppermint and chocolate….
These two flavors go together so well case in point- mint chocolate chip ice cream, thin mints, peppermint patties, grasshopper pie. If you don’t like this flavor combo then I have one thing to say to you Bah humbug!
I usually make these chocolate peppermint cookies around christmas but I just wanted to do something different. As I tried to think of something “new” and “different” I turned on the TV to watch my usual shows but was surprised to find that my regularly scheduled programming was not on! Oh the horror.
What was on instead? A christmas special for the tree lighting in Rockafeller center with lots of performers covering christmas songs. And to my delight I was just in time for the world premiere of Mariah Carey and Justin Beiber’s video of their collaboration of All I want for Christmas. Need I say more? I was bombarded with a half clothed Mariah and a young Justin Beiber dancing around a shopping mall. Awkward.
In all honesty I’m a bit of a traditional christmas music gal, give me some Bing Crosby or Judy Garland and I’m a happy girl. Don’t get me wrong I love Mariah’s original All I want for Christmas partially because it reminds me of Love Actually, quite possibly one of my favorite christmas movies ever…don’t even get me started on that Ralphy and that beebee gun. But really? Did she have to remake the song and shoot a video as if she hasn’t aged at all?
So what conclusion did I come to after all this?
That awkward combo of Mariah and Biebs made me think, why don’t I just create a new version of my cookies? And so my chocolate peppermint cupcakes were born.
I made chocolate cupcakes with a hint of mint. If you don’t already know my stance on cake flour please read. I really do think homemade cake made with cake flour tastes best but I know the holidays are hectic and who am I to say that a box chocolate cake isn’t good enough? I am not above box cake mix when in a hurry. Box cake is better than no cake.
And if the holiday’s are getting to you or family is just too much or if that video seemed to in-sense some rage into you, take it out on some candy canes. Believe me it’s cathartic.
Pour now sparkly crushed candy cane into some fluffy vanilla butter cream and all may seem right with the world again after watching that creeptastic video.
These are the perfect little chirstmasy treat and yes christmasy is word I made up. Sweet and minty these taste delicious and are mistletoe friendly.

2 1/4 Cup cake flour
1/2 Cup Cocoa powder
1 1/2 teaspoons baking soda
1 Stick butter
1 3/4 Cup sugar
1 Tablespoon peppermint or mint extract
1 1/3 Cup cold water
In a bowl combine flour, cocoa powder, and baking soda and set aside.
In another bowl cream butter and sugar until it forms a paste. Add each egg one at a time and mix. Add peppermint extract. Slowly start adding flour mixture and milk alternating until all combined.
Bake in cupcake pan with liners for 15 minutes in a 350 degree oven.
Once baked through let them cool completely.
Vanilla Candy Cane Butter Cream:
~Adapted from How Sweet Eats White Chocolate Butter Cream
1 stick of butter
2 3/4 cups powdered sugar
1 teaspoon vanilla extract
1 tablespoons milk
3 Tablespoons crushed candy canes
In a bowl whip butter. Slowly add powdered sugar until all combined. Add vanilla and milk and beat again.
Crush candy can in a food processor or in a plastic bag using a wooden spoon. Add crushed candy cane to the fluffy butter cream and fold.
Pipe icing out on top of cupcakes and sprinkle with candy cane pieces.
