I’m a total hypocrit.
I’m totally aware of it, isn’t that the worst?
I’ve told you about a 1,000 times that you will not find nuts in my baking. I’ve whined and moaned about how an evil walnut could destroy a whole pan of brownies and now I have gone and done this.
I obviously should have been a little clearer about my anti-nut sentiment. I do not hate all nuts even though I seem to pretend to. I Love me some cashews, I like peanuts, macademia nuts are great, almonds are okay, am I confusing you yet?
Yeah I’m confusing myself. Plain and simple, I don’t like pecans (unless in pie) and I don’t like walnuts (unless covered in sugar). You will never see a brownie or cookie tainted by a pecan or walnut here, it just won’t happen.
But pistachios are a whole other story. I LOVE pistachios. Once you start eating them you really just can’t stop. No really, you cannot stop. If you’re like me you’ll have a bowl of them in front of you and an hour later you will still be picking at them.
Now pistachios, you can add them to any baked good and it will become infinitely better. It’s almost like if you give a mouse a cookie it will want to add pistachios to it. What book were you reading? I’m pretty sure it started out that way but then the people at the dairy company beat out the guys at the nut company and it became milk. Fact.
I actually think I was a little nuts when I decided to make these (pun intended). I bought a pack of pistachios and shelled all of them myself. Needless to say my fingers were a bit sore afterward, ouch. I would suggest to save your sanity and fingers by buying already shelled pisatchios if you can find them.
If you find yourself eating 2 pistachios for everyone 1 you add to the dough, then you are right on track.
The salty crunch from the pistachios, the gooey chocolate chips and soft cookie are pretty addictive. I should actually put a warning on this recipe for your own safety.
WARNING: If you consume one of these cookies you may become addicted. This cookie has been compared to crack (although its unconfirmed because I don’t know anyone who does crack), you will not be able to control your cravings and you may eat up to 10 in one sitting.
Consider yourself warned.
That being said, you should totally make these.
Chocolate Chip Pistachio Cookies
~Adapted from How Sweet it is M&M Cookies
2 cups and 2 tablespoons all-purpose flour
1/2 teaspoons baking soda
1 1/2 sticks butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg and 1 egg yolk
2 teaspoons vanilla extract
1/2 cup pistachios
1/2 cup semi-sweet chocolate chips
In a bowl add flour and baking soda and se aside.
In another bowl mix the cooled melted butter (if you don’t let the butter cool enough the dough will be super soft and runny, give it 10 minutes to cool) eggs, sugars, and the vanilla and stir until combined.
Slowly add dry ingredients to the wet ingredients. Fold in the chocolate chips and pistachios.
Line a sheet pan with parchment paper and place mounds of flattened cookie dough 2 inches apart. place another ball of dough on top of each flattened cookie mound. (essentially 2 mounds of dough on top of each other)
Bake in a 325 degree oven for 10 minutes until slightly golden but still soft.
If you give Brooke a chocolate chip pistachio cookie…. all bets are off.
